Tsunan Brewery is located in the Uonuma region of Niigata Prefecture and is rooted in the local nature and culture. As a new challenge looking to the future together with local producers, we have decided to make sake from Uonuma Koshihikari rice, which is edible rice.

Sake is usually made from sake rice, which is difficult to use for purposes other than sake production and can pose a risk to producers in an environment such as the Covid-19 outbreak, where sake production is restricted. However, the use of edible rice, which can continue to be produced at any time, reduces the burden on rice producers and supports local agriculture. This new initiative paves a sustainable path for Tsunan Brewery to work together with the local community, and is an important step toward not only delivering delicious sake, but also continuing to make it along with the livelihood of the producers.

Conventional wisdom had it that it was impossible to make good sake from edible rice (especially Koshihikari), but we went through a process of trial and error to achieve sustainable local sake production.

Of course, there are differences in the production methods between sake brewing rice and edible rice, and we have been groping with the rice day by day and finally succeeded in producing the best junmai daiginjo sake that reproduces the sweetness and flavor of Koshihikari rice grown in Uonuma. We consider this initiative to be a major step forward, and as production with edible rice becomes more common in the future, the relationship between farmers and sake breweries regarding the purchase of rice will become better, and sustainable agriculture and sake production can be compatible throughout Japan.

The sweetness of Koshihikari rice grown in Uonuma has given birth to the highest grade of Junmai Daiginjo-shu. It is a very special sake that will make you say “delicious” from the first sip. It is a Junmai Daiginjo-shu that will bring smiles to the faces of those who drink it, and will also make the land of Uonuma, where rice is grown, more sustainable. It is delivered in a paulownia wood box to make it a great gift. Also, in limited quantities, the product comes with a wooden tag with a serial number.
